1 bell pepper
4 spring onions
10 large black olives
fresh mint
chives
1 lemon
olive oil
salt
freshly ground pepper
For serving
tuna in olive oil
Recipe steps
Cook the rice in salted water according to the instructions and then let it cool.
Put the green beans in boiling water and cook them for about 3 minutes. Then drain and rinse with cold water, or you can cool them with ice.
Remove the seeds and ribs from the bell pepper, then cut it into thin strips. Slice the cleaned spring onions and olives into rounds. Add chopped chives. Cut the green beans in halves or thirds, depending on their size.
Mix the rice with the other ingredients. Season with lemon juice (if you have a non-chemical treated lemon, add grated zest), olive oil, salt, and pepper. Let the mixture sit for about an hour to allow the flavors to meld.
Garnish the dish with torn mint leaves, add tuna, and serve.
