Homemade potato rolls

First, we will boil potatoes in their skins, and once they are cooked, we will let them cool down. Then we will prepare a leaven from yeast, which we sprinkle with sugar. We mix it well, pour in 2 tablespoons of lukewarm milk, dust it with flour, and set it aside in a warm place to rise.

350 g plain flour
200 - 250 ml milk
1 piece small red onion
1 - 2 teaspoons dried thyme
100 ml sunflower oil
1 piece egg
42 g fresh yeast
1 tablespoon sugar
350 g semolina flour

Then we sift both flours, peel and dice the onion. We peel the cooled potatoes and grate them finely.
In a bowl with flour, we add milk with yeast, oil, eggs, and grated salted potatoes. We work everything into a dough, which we set aside to rise for about an hour. After rising, we mix in the onion and thyme. We roll the dough to about a centimeter high. Then we use a cutter to cut out circles, which we place on a baking sheet lined with parchment paper. Once finished, we cover them with a towel and let them rise for another 15 minutes. Before putting them in the oven, we brush them with oil. We sprinkle cumin or sesame on top. We bake until golden for about half an hour at a temperature of 180°C. After taking them out, we brush them with oil again.
We serve the rolls as a side dish; they can also be spread with various spreads.
