1/2 zucchini
1/2 eggplant
1/2 red pepper

Recipe steps
For two pizzas, we chop zucchini, eggplant, bell pepper, and four mushrooms into small pieces. We place everything in a large bowl, season with salt and pepper, add olive oil and two crushed garlic cloves. We mix thoroughly, spread it out on a baking sheet greased with olive oil in a single layer, and bake at 170 degrees for about 20 minutes.
Meanwhile, we start preparing the dough. From part of the dough, we roll out a thin sheet, which we then gently stretch so as not to damage it, and then transfer it onto baking paper, making it easier to handle.
We spread the baked vegetables on the dough and then sprinkle a thick layer of pecorino cheese on top. Finally, we drizzle olive oil over the pizza.
We bake the pizza in a preheated oven for about 3-4 minutes. Once the edges of the pizza have risen but it is not yet golden brown, we take it out and sprinkle it with mozzarella. We then bake it for another 2 minutes.
After removing the pizza from the oven, we immediately cut it into pieces and sprinkle it with grated pecorino and finely chopped parsley.
