1 kg zucchini (diced)
4 tablespoons preferably peanut oil
150 g all-purpose flour
1 tablespoon olive oil
2 large eggs, separated into yolks and whites
150 ml milk
salt
pepper
Recipe steps
In a bowl, we put the flour, olive oil, salt, and pepper and mix everything thoroughly. Then we add the yolks and milk, mix again, and let the mixture rest for two hours.
We put the zucchinis in a pan with peanut oil and steam them on low heat under a lid for about 10 minutes, occasionally stirring. Finally, we transfer them to a strainer to let the excess oil drain.
We whip the egg whites into a snow, then add them to the batter, and finally also include the grated zucchinis.
We fry in oil for 2-3 minutes on each side.
