Viennese Potato Salad

Ingredients (what you need)
750 g potatoes (type A, preferably red)
200 ml beef broth
2 medium red onions
2 tablespoons oil
2-3 tablespoons apple cider vinegar
1 tablespoon mustard
fresh chives
salt
ground pepper
Recipe steps
Peel the onion and cut it into coarse pieces, chop the chives into small pieces. Put everything in a bowl, season lightly with salt and pepper, then add vinegar, oil, and mustard, and mix well.
Let everything sit for a while to allow the onion to absorb the flavors.
Boil the potatoes with the skin on, and then peel them while they are still hot.
When the potatoes are ready, heat the broth in a smaller pot. It should be hot, but not boiling.
Pour the hot broth into a bowl and start cutting the potatoes into slices or cubes, which we gradually add to the broth.
Gently stir, add the onion and chives, and mix thoroughly again to combine all the ingredients well.
