Ingredients (what you need)
1.5 kg plums
300 g brown sugar
1 tsp ground ginger
3 cloves garlic
2 chili peppers (optional)
10 cloves
2 tsp ground cinnamon
0.25 tsp grated nutmeg
125 ml red wine vinegar
125 ml red wine
2 tbsp mustard seeds
2 tbsp salt
Recipe steps
We wash the plums, remove the pits, and cut them into smaller pieces.
In a pot with a thick bottom, we place the plums, sprinkle them with sugar, and let the sugar dissolve while stirring occasionally.
Meanwhile, we crush the cloves and mustard seeds in a mortar. We finely chop the peeled garlic cloves and the chili pepper.
Once the plums with sugar are cooked, we gradually add all the other ingredients.
We simmer the plums until they are almost soft and the mixture thickens. If necessary, we add a bit of water.
Finally, we season to taste with vinegar, salt, and sugar.
We pour the prepared chutney into clean, dry jars, seal them with lids, and turn them upside down. Then we let them cool down.
