5 boiled potatoes in their skins
2 carrots
1/4 celery
1 parsley root
4 pickles
mayonnaise
salt
ground pepper
vinegar
1/2 onion
full-fat mustard
Recipe steps
First, we boil the potatoes with their skins on. When the potatoes are done and cooled, we peel them and cut them into small cubes.
We clean the carrot, parsley, and celery, then cut them into small cubes and put them in a pot with salted water and a tablespoon of vinegar. We boil for about 30 minutes. Meanwhile, we chop the pickles into small cubes and finely chop the onion.
When the vegetables are cooked, we drain them and let them drain for a moment. Then we mix them with the potatoes, add salt, pepper, a bit of pickle brine, mayonnaise, and a teaspoon of mustard. We mix everything thoroughly and refrigerate the salad to let the flavors meld. Finally, we serve it as a side dish.
