Pork rib on mushrooms
Pork ribs are slightly crushed and scored at the edges so they don't curl while roasting. Then they are salted and peppered on both sides with fresh spices.
Ingredients (what you need)
6 pieces of pork ribs (bone-in chop)
200 g smoked bacon (Lopenická)
3/4 kg small fresh mushrooms
1 large onion
plain flour
juice of 1 lemon
salt
four-color pepper
100 g pork lard
broth
Recipe steps
Pork ribs are lightly tenderized and the edges are cut to prevent the meat from curling during roasting. We season them with salt and sprinkle freshly ground four-colored pepper on both sides.
In a steak pan, we heat pork lard and thoroughly sear the meat on both sides until it turns golden brown. Then we transfer the seared meat to a larger pot.
To the fat from the meat, we add diced bacon and wait for it to render. Once the bacon is done, we add chopped onion and sauté it until it turns slightly brown.
When the onion is nicely golden, we add cleaned mushrooms. We wash them beforehand, drizzle with lemon juice, let them sit for about 3 minutes, and then rinse them under water to remove the acidity. Prepared this way, the mushrooms will remain nice and light and crunchy.
We keep whole small mushrooms, cut medium ones in half, and slice large ones into thicker pieces. We briefly warm the mushrooms with the onion and bacon, and then add them to the pot with the meat.
We add broth to the minced meat so that the meat is almost submerged, and we simmer it with the mushrooms for about 30 minutes.
We remove the tender meat and add two tablespoons of smooth flour mixed with a small amount of water to the sauce. This thickens the mixture, which we cook for at least 15 minutes while stirring frequently. We serve with rice, bread dumplings, or potatoes.
