Ingredients (what you need)
- 6 larger carrots
- 1 medium onion
- fresh ginger (the size of a thumb, about 4 cm long)
- 0.5 liters of broth (high-quality vegetable bouillon without glutamate)
- 2 tablespoons of olive oil
- 1/2 lime
- parsley
- 1/2 cup of plain yogurt (or sour cream)
Recipe steps
Peel the carrot and cut it into cubes (up to 5 cm large), finely chop the onion, and peel and grate the ginger coarsely.
Pour olive oil into a pot, add the chopped onion, and sauté it briefly. Then add the carrot and sauté together until the onion softens and the carrot lightens a bit.
Meanwhile, prepare the broth, which we will then add to the carrot and onion mixture, stir in the ginger, and cook covered until the carrot is tender (about 15 minutes).
Thoroughly blend the soup into a smooth cream, add lime juice, and adjust the seasoning with salt or pepper if needed. Finally, stir in the yogurt and serve sprinkled with chopped parsley.
